in a T25 the oil lubricates and cools the turbo. The water cooled side of it can actually be disconnected if you want to (done fairly often on the 200sx oc).
The water is there to cool the oil and stop it coking up inside the turbo and just generally ruining the oil. Allows you to go longer between oil changes, reduces the risk of the oil feeds getting blocked up and helps to cool the turbo once the engine is turned off slightly as thats when alot of damage can happen, once the oil flow has stopped and youve just thrashed the nuts off it without letting it cool before shutting off (cant expect oem turbo cars to all come with turbo timers).
