Engine temperature help please!

   Ive recently changed the coolant temp sensor on the engine, Today i fired it up from cold, everything fine.. Then i was driving to the shop about 5 minute drive and the temp on my dial was at half which obviously it should be at, but i had only driven for about 5 minutes if that. As i carried on driving the temp then dropped to about quater, then moved back up, then back down. What the hell is going on? Also when i fitted the new temp sensor, no fluid came out from the thermostat.. is that right?
   
   Is the temp sensor for the dials knackered? or is it something else?

   Mine does that mate, goes up to about half way and then drops and then back up lol
   
   Mine doesnt have a thermostat on atm.
   
   My red saxo just stayed at half(ish) all of the time.

   Its never done it before, just today. Must be something wrong. Need it fixed asap!

   Maybe the fan cuts in to bring the temp down, then when it turns off the temp rises until the fan kicks in again, causing the temperature to fluctuate?
