Eibach Sportline springs are intended for original damper usage, and will lower 50mm or so on a VTS, so on a VTR you are looking at about 45mm because of the slightly decreased weight over the front. For looks alone I recommend this - although also consider the Spax spring/damper combo - which is also well suited to road usage. Either of these are pretty much spot on for a nice sporty look without being stupidly low.
If you're looking for a better handling package over looks, then for light track and fast road usage you can't go far wrong with the common and very good Bilstein B8 and 155lb Faulkner setup, perhaps coupled with some uprated bushes (Powerflex or Polyrace). However the downside as usual with high quality items is you will pay a lot for it. Last time I checked the Front and Rear B8 package was about £350 and the Faulkners around £70. This will be a very decent handling setup with the standard 19mm VT Torsion bars on the rear, but perhaps could be bettered with a 24 or 25mm rear Anti-Roll bar, since iirc the VTR came with a 22mm ARB, which can be a bit wooly under hard cornering.
