Engine trouble

Hi I. I have a 53 Vts and it has Kent Pt51k cams and they are in a JP4 head. it also has a boost valve for the fuel and a air/fuel ratio guage and a vacum guage. It starts but you have to give it a rev so that it doesn't cut out. but what really pisses me off is that some times it will run fine and the air/fuel guage shows a steady mix then it all of a sudden runs like a bag of sh*t and the needle on the air/fuel guage is all over the place and then it goes into ''limp-home'' mode and you have to turn her off. I live in shetland and i can't get her mapped very easily. i wondered if anyone knew of a good place to get re-mapped near Aberdeen or if they're was something i could do to remedy the problem. 1 more thing, she runs good when driving and when you boot it, its just idleing its a bi*ch. Personally I've never heard of good things about these "boost valve's" if it's what i think it is, I'd remove it and see how you go from there.

If it's poor idle/start up could be a few things...
Air intake temp sensor
Idle control valve
Engine Temp sensor

or even something as simple as a broken wire.
