   i can find insurance documents though, what would i need to tax it at the post office instead of online?

   Tax renewal (or log book) MOT certificate and insurance certificate

   as said, but if you can not find anything do it online if you get pulled by police for not having it displayed. You will just have to explain you done it online and you can prove it so you will be fine.
